Calcium acetate

Intended Use: Intended for use as an antimicrobial agent at a maximum use level of 0.2% in baked goods, gelatins, puddings, and fillings; 0.15% in sweet sauces, toppings, and syrups, 0.02% in cheese; and 0.0001% for all other food categories. Calcium acetate is also intended to be used as a firming agent, flavor enhancer, flavoring agent or adjuvant, nutrient supplement, and stabilizer and thickener in food at levels not to exceed current good manufacturing practices.
